- Make ready as per taste Salt
- Take 1 cup (250ml) Oil
- Make ready 1/4 tsp Food color (saffron / yellow)
- Prepare Note: Soak rice for 30 min's

- Into a deep pan add oil, whole garam masala (cloves, cardamom, cinnamon stick & bay leaf) let it crackle the add thinly chopped onion and cook on medium flame until it turns golden brown. Tip: add some salt to Onion to cook it faster
- Once it is golden brown add ginger garlic paste and saute well
- Once the raw smell on ginger garlic goes off add chicken and saute, Tip: cook chicken on high flame for 5 mins to seal the juice, add chilli powder
- Then add coriander powde, turmeric powder and salt
- Throw in garam masala powder stir cover and cook on medium flame until chicken cook's well
- Once the chicken is tender & soft add chopped tomatoes stir cover and cook until tomatoes are soft and mushy
- Tomatoes are cooked well, noe add handful of chopped mint and coriander leaves, squeeze 1 large lemon
- Mix well, cover and cook on medium flame for 10 mins. Akhni is ready Note: do not add water to the akhni
- Now let's get the rice ready
- Take a deep pot add water and allow it to boil, once boiled add 4 whole green chillies, then add soaked rice
- Add 1/4th tsp of yellow or saffron food color mix well, then add salt to taste
- Cook the rice upto 70% then strain it (discard the water)
- Now mix the akhni to 70% boiled rice cover the lid and keep it on dum(medium flame on a dum tawa) for 20 min's
- Smokin hot platter of biryani is ready to be served
