The ingredients needed to make Chicken Gyros:
  1. Make ready 500 g chicken thigh fillets (deboned)
  2. Get 1 cup (250 ml) Greek or natural yoghurt
  3. Get 25 ml lemon juice
  4. Make ready 50 ml olive oil
  5. Take 1/2 teaspoon cayenne pepper(less if you don’t want it too spicy)
  6. Get 1 teaspoon ground cumin
  7. Get 1 teaspoon ground coriander
  8. Take 1/2 teaspoon ground cinnamon
  9. Prepare 2-3 cloves crushed garlic
  10. Make ready Salt and pepper to taste
  11. Take 1 teaspoon paprika
  12. Get Oven tray with 1/2 large onion and wooden skewer- this is the frame that supports the chicken thighs during cooking

In another large bowl or gallon plastic bag, combine chicken thighs and marinade, stirring well to coat. Cover and refrigerate for at least one hour and up to one day. Mix well, ensuring each thigh is well coated. Brush the outdoor grill with oil, then preheat on medium high.

Instructions to make Chicken Gyros:
  1. Make the marinade by combining all ingredients except chicken, onion/skewer.
  2. Add flattened chicken thighs - I used the palm of my hand to gently flatten so that all the pieces were about the same thickness
  3. Marinade for a minimum of 2 -4 hours
  4. Assemble marinated chicken thighs on the skewer - add at right angles to each other to even out the gyros stack.
  5. Bake in oven at 200 degrees centigrade for 1 hour 20 minutes or until cooked through. The outside will get a little burnt but don’t worry - important to check the inside is cooked.
  6. Remove from oven, cool slightly and then slice. Serve with salad and pita bread. A nice side dish is some yoghurt with mint (in winter I substitute a teaspoon of mint sauce from fresh mint).
  7. Enjoy!

Mix well, ensuring each thigh is well coated. Brush the outdoor grill with oil, then preheat on medium high. The chicken is tossed together with oil , garlic, oregano, paprika, salt, pepper, lemon juice, red wine vinegar and a little honey. The honey may seem like a slightly unusual addition, but it's there to help create that glaze and slight sticky-sweetness you would get if you were slow-roasting the meat (as you would for traditional gyros). Chicken gyro is usually served wrapped, like a sandwich.
