Steps to make Coffee Cake:
- For this recipe you'll need a 2x 24cm round cake tins. Then line the 2 cake tins with greaseproof paper.
- Preheat oven to 140c.
- Put all the cake sponge ingredients in a large bowl. Using an electric mixer on low speed or mix by hand until all the ingredients are combined.
- Split the mixture equally between the two tins. Then bake for 30-35 minutes or until fully baked (use a skewer to check its done).
- Once the cake sponges are cooked remove them from the oven and allow them to cool for 30 minutes in the cases before removing from the tins onto a wire rack. Allow the cake sponges to completely cool before adding the buttercream.
- To make the buttercream mix the boiling water with the coffee granules. Set aside to cool.
- In a large bowl beat the butter with the vanilla extract until smooth and soft using an electric mixer on low speed or by hand. Next add the icing sugar and beat with the butter until smooth.
- Add one teaspoon of coffee at time into the mixture and beat with each addition by hand or with an electric mixer on the lowest speed until fully combined.
- Check the consistency of the butter cream, it should be soft enough to spread but if its still a little firm add a tiny splash of milk until it reaches the correct consistency.
- To make the cake place one of the sponges on the serving plate. Spread the buttercream evenly between the middle and top layer of the cake. I had left over buttercream so I creamed the side of the cake aswell. Serve and enjoy.
