- Make ready 5-6 Spring Onions, small to medium slices

- Make ready 50 g Fine Rice Noodles, cooked as per packet, chopped 1-2cm bits
- Prepare 3-4 Tblsp Satay Sauce. I get mine from Sainsbury's £1.80 a jar
- Get 1-2 Tbsp Sweet Chilli Sauce
- Make ready 1-2 good handfuls Cashew Nuts, lightly toasted
- Prepare Little Gem or Butter Lettuce Leaves, washed and dried, to serve
- Get Lime Wedges, to serve
- Prepare Coriander leaves, torn, to serve
- Get 1-2 Tblsp any neutral flavour cooking oil
Steps to make Oriental Chicken & Cashew Nut Lettuce Cups:
- Mix the minced chicken with the garlic, ginger and soy sauce, set aside whilst you prep the rest of your ingredients.
- Lightly toast the cashew nuts on a fry frying pan until just starting to brown slightly, remove to a cold plate to cool until you are ready to use them.
- Heat 1-2 Tblsp cooking oil in a medium to large wok (or deep sided frying pan) until it is just smoking
- Add marinated chicken, stir fry, breaking it into fine pieces, until it is starting to brown. This will take about 3-5 minutes
- Turn down the heat a little on the wok so as not to burn things and add the red pepper and spring onions. Stir fry for a couple of minutes, until just starting to soften
- Add satay and sweet chilli sauce to the pan and give everything a thorough mix and let it bubble for a minute or so. Add a splash of water if it seems a little dry.
- Mix in the drained, softened chopped rice noodles and the toasted cashew nuts, and heat through. Have a little taste and adjust the sauce if you feel it needs extra soy, satay, sweet chilli sauce or a splash of water
- Arrange lettuce leaves onto your serving plates and spoon on the chicken and cashew mix. Scatter over some coriander leaves and pop a few lime wedges on the side
