  4. Make ready 2 tsp baking powder
  5. Make ready 450 g butter
  6. Prepare 8 eggs
  7. Take 6 tbsp milk
  8. Get 2 tsp vanilla essence
  9. Take 5 food colourings of your choice
  10. Make ready 1-2 tubs Vanilla Buttercream frosting (I used Betty Crocker)
  11. Get Hundreds and thousands
Instructions to make Pride Cake!:
  1. Depending on how many cake tins you have, grease and line them with baking paper. You may want to make some out of tin foil or just cook the cakes in batches
  2. Make the sponge mixture by mixing together all the dry ingredients (you can do this in a food processor, mixing bowl or a handheld mixer)
  3. Add the wet ingredients apart from the food colouring and mix until all is combined
  4. Take 5 bowls and divide the mixture evenly between them. I tend to do one big spoonful at a time and keep going until the mixture has run out instead of trying to guess by pouring
  5. Put different food colourings into the different bowls. The more colouring the more intense the colour. I used Dr Oetker gels which even with practically a whole tube still gave a fairly pastel colour. If you want really vibrant rainbow 🌈 colours you’ll need to by more fancy gels from online!
  6. Bake each cake in the oven at 180c/160c/gm4 for about 15-20 mins each until you can poke a skewer through the middle and it comes out clean. Here’s where you may have to do it in batches depending on the oven space and number of tins
  7. When the cakes come out of the oven, put them on a wire rack to cool (another good reason to do in batches as it’s hard to get them all on a rack!)
  8. When the cakes have cooled, layer the cakes onto your chosen presentation plate/cake stand, spreading a bit of the buttercream frosting between them.
  9. Use the rest of the buttercream to cover the top and sides of the cake as thickly as you want it!
  10. Take the hundreds and thousands in handfuls and throw them all around the side of the cake. Beware- this is a very messy stage and I’d recommend doing it over some baking paper so you can keep reusing the bits that miss the cake!
  11. Decorate with handmade pride flags using cocktail sticks and bits of paper. Google “pride flags” for a list of them!
