- Add eggs and oil in bowl and whisk it lightly. Now add wet mixture to the flour mixture and mix everything well.
- Now add raisins to it and mix it. Add carrots and mix it again. You will find the batter a little hard but as you keep on mixing, it will loosen up.
- Grease a baking tin and dust it with some flour or line it with a baking paper. Now add prepared cake mixture to it and level it. Now bake the cake in a preheated oven at 160 degrees for 45 minutes. When it is ready take it out from the oven and let it rest for 10 minutes. Now remove it from the tin and transfer it to a wire rack to cool down completely. It should be completely cold before frosting.
- To frost the cake cut it horizontally into two pieces. Now take one circle and apply some chocolate ganache on it and cover it with another piece. Now cover the full cake with the remaining chocolate ganache. You can do the same with the cream cheese frosting. This carrot cake can even be served plain with tea or coffee.
