- Prepare Either: mix enough soft goats with yogurt to cover (you can add a sprinkle of lemon juice + vanilla extract to the cheese mix)
- Make ready Or strain some yogurt the night before (so you’re making labneh without the olive oil) and mix with a few drops of vanilla extract and a drizzle of honey/ maple syrup to taste (see recipe)

- Line a baking tray (23cm) with baking paper. Turn the oven on to 180C.
- In a bowl, mix the almonds, bicarb and spices and salt.
- In a separate bowl, mix the coconut oil, maple syrup, apple sauce, flaxseed egg and banana.
- Add the carrots, cranberries and walnuts to the wet mix.
- Combine the wet mix with the dry mix.
- Put the mix into the lined tray and bake until golden brown - about 30-35 mins.
- Leave to cool before adding the topping/ cutting. Enjoy 😋
