  1. Heat up the oil and add the onions fry for 1 minute then add the Garlic and Ginger. Mix in fry for a further 30 sec then add the curry powder and fry with the onions for 2 minutes. Add a little more oil if dry.
  2. Next add the Chicken and fry for 4 minutes until all coloured. Then add the curry leaves.
  3. Next add all the dried Spices one after the other then mix all in. Next add the boiling chicken stock also the sultanas stir in. Leave to simmer for 10 minutes stirring occasionally.
  4. Then add the Tomato puree and the Mango Chutney stir in. Let cool down for 5 minutes then add the yogurt and stir in well.
  5. Bring back to the boil turn down and simmer for 10 minutes. If you want it thicker add 1 tbls Corn flour/ Starch mixed in a tiny amount of cold water.
  6. Serve on a bed of Basmati Rice with some Naan bread on the side.
