- Line the bottom of the twelve indentations of a Lakeland mini cakes baking tray. Heat the oven to 180/gas 4
- Melt the butter and leave it to cool. I use a microwave for this. - Put a pan of water with around 6cm water onto boil. Put the eggs and sugar into a Pyrex bowl that is the right size to sit on top of the pan if boiling water. Take the boiling water off the heat and put the bowl in top if it. Whisk the eggs and sugar with an electric whisk until light and fluffy. Remove the bowl from the pan and whisk until it is cold.
- Sift the self raising flour and cornflour together and add it a quarter at a time into the eggs and sugar. Folding it in gently with a metal spoon. Alternate between folding in the flour and melted butter. Be mindful not to knock out the air.
- Spoon the batter into the cake tin holes. Fill them up the three quarters full.
- Bake until lightly browned and a skewer comes out clean. Around 20 - 25 mins - Leave to cool in the tin.
- When completely cold slice the cakes in half and fill with whipped cream and a layer of raspberry jam. Lemon curd would be delicious as an alternative.
- Tip: If you don’t have the Oakland mini cake tins use a bakewell lined 8cm dia cake tin instead.
